Leprechaun Eggs

My oldest son is the pickiest human being on the planet, but is also game for any holiday festivities. I definitely can use this against him! Ha! Try this healthy snack to green up your St. Patrick's Day, and also get some veggies in those little bellies!

You will need:

  • 3 Eggs

  • A BIG handful of spinach (about a cup to a cup and a half)

  • 2 TBSP of milk

  • Salt and Pepper to taste

Instructions:

  1. Crack your eggs into your blender.

  2. Shove in the spinach & pour in the milk.

  3. Pour in the milk and blend until no big chunks of spinach are visible.

  4. Cook them like normal scrambled eggs until they are cooked through!

  5. Add salt and pepper to taste. Viola!

Activity Notes:

  • If you need to cover up the spinach a little bit, try putting ketchup on the eggs. My kids are all about that.

  • This recipe works for Christmas too! At our house around the holidays we call them "Grinch Eggs"
